Two Pumpkin Recipes

Autumn is the season for pumpkins!

At least if you ask me.

They are great for decoration (especially Halloween) and so delicious when cooking.

My favorite recipes are pumpkin pie and pumpkin soup.

I’ve never thought about pumpkin pie before Gossip Girl. The Thanksgiving episodes are the most iconic in every season.

And I’m sure you know Blair Waldorf’s addiction to pumpkin pies as much as I am.

So why not make a delish pie for yourself?

Here we go!

PUMPKIN PIE
INGREDIENTS

Cake Base:

♥ 250 grams flour

♥ 2 teaspoons of baking soda

♥ 75 grams sugar

♥ 125 soft butter

♥  1 egg

Topping:

♥ 350 grams of pumpkin

♥ 150 grams sugar

♥ 3 eggs

♥ 200 grams of whipped cream

♥ 2 teaspoons of cinammon

♥ other spices like ginger, clove, nutmeg

HOW TO

Take the flour, baking soda, sugar, one egg and soft butter to create a short pastry. Afterwards put the dough in your fridge to let it cool for a bit. While you are waiting you can search for a cake pan of your choice. When the pastry has cooled down a little you may coat the pan with the pastry.

It’s time to start with the topping now! Yay! 😉

Peel and core the pumpkin. Cut it into cubes after.

When your little pieces of pumpkin are prepared cook these in some water. As soon as those are soft enough you can mash them up to purée.
Mix it with the other topping ingredients.

The mixture might be very runny so be careful while pouring it onto the dough!

Baking time!

Set your oven to 180 °C degrees (356 °F) and shove the cake into it.

Leave it there for about 45 minutes and then enjoy! ☺

PUMPKIN SOUP
INGREDIENTS

Soup

♥ 1 pumpkin

♥ 500 grams of carrots

♥ 500 grams of potatos

♥ 1 onion

♥ butter

♥ 2 liters of vegetable broth

Topping

♥ Cream or coconut milk

♥ Nuts, fried batter pearls, bread

HOW TO

Peel and core the pumpkin. Cut it into cubes after. Wash and cut the carrots, potatoes and onion.

Start to heat some butter in a pot. Add the onions and braise them lightly.

Pour the broth into your pot and boil it.
Now you can add the rest of your vegetables.
Let it simmer for about half an hour. Then use your blender shaft to create a homogeneous soup.

Your soup is now ready to be eaten. Add some roasted pumpkin seeds, walnuts or bread to top it off. Use some cream or coconut milk to make the soup even more delish! 😉
